1 cup Plain Flour
3/4 cup Wholemeal Flour
1/2 cup Caster Sugar
2 tsp (10g) Baking Powder
2 Eggs
1/4 cup Melted Butter
3/4 cup Buttermilk
300g Blueberries (fresh or frozen)
Preheat oven to 190*C
Sift the flours, baking powder and sugar into a bowl.
Beat the eggs, melted butter and buttermilk together.
Combine the liquid and dry ingredients, stirring long enough to moisten the dry ingredients.
Fold in blueberries and fill muffins papers till 2/3 full.
Bake for 20 minutes or till skewer comes out clean.
