125g Butter
1/3 cup Caster Sugar
1/3 cup Golden Syrup
1 Egg
2 1/2 cups Plain Flour
1/4 tsp Bicarbonate of Soda
1 tsp Cinnamon
1 tsp Ground Ginger
1 tsp Mixed Spice
Preheat oven to 180*C
Place the butter, sugar and golden syrup into a medium bowl. Beat with electric beaters till pale and creamy, scraping down the side of the bowl occasionally during the creaming process.
Add egg to the creamed mixture. Beat till well combined.
Sift the flour and bicarbonate of soda using sieve over the wet ingredient mixture.
Stir with a spoon until soft dough forms.
Line some baking trays with baking paper.
Sprinkle the bench and rolling pin with flour.
Turn dough out onto a floured bench and roll out with the rolling pin till the dough is 6mm thick.
Use cookie cutters to cut out biscuits.
Transfer the biscuits to the baking tray.
Bake biscuits for 12-15 minutes or till firm and golden.
Allow biscuits to cool for 5 minutes before transferring to a wire rack to cool completely.
